Shepard's (Turkey) Pie
















Preheat oven to 375

Ingredients:

2 c. turkey breast - chopped or shredded
2 c. corn or any vegetable(s)
3 c. mashed potatoes (no butter and skim milk)
1/2 c. fat free shredded cheddar cheese

Directions:

Spray casserole dish with non-stick spray
Mix soup and turkey together and pour in to dish.
layer vegetable(s) on top of turkey mixture
mix cheddar cheese with mashed potatoes and spoon over vegetables evenly.

Bake at 375 for 30 minutes.  Broil for a few minutes if you wish to brown the potatoes.  

This was a hit and super easy to make with turkey leftovers!  Next time I am going to try and slip some stuffing in between the corn and potatoes.

Chicken Chili













Ingredients:

1 Tbl vegetable oil
1 1/4lbs boneless, skinless chicken breasts cut into 1/2" cubes
1package Chili Seasoning
2cans (8oz each) tomato sauce
1can (14.5oz) kidney beans, rinsed and drained
1can (11oz) whole kernel corn, undrained
1tsp Ground Cinnamon

Directions:

1. Heat oil over medium-high heat
2. Add chicken and cook 5-6 minutes, stirring occasionally until lightly browned.
3. Stir in remaining ingredients.
4. Bring to a boil.
5. Cover and simmer 10-15 minutes, stirring occasionally.
6. Serve with a pinch of chopped chives or a sprinkle of low-fat cheese.
