Banana Bread

2 1/4 cups sifted all purpose flour
1 tsp baking powder
1/8 tsp salt
1/2 cup butter
1 tsp baking soda
1 1/4 cup sugar
3 ripe bananas pulped
2 eggs beaten
3/4 cup milk
3 tsp vinegar

Preheat oven to 350f

Sift together dry ingredients and set aside.
Blend butter and sugar together.
Add vinegar to milk and blend in to butter mixture.
Add beaten eggs and banana pulp and stir until thoroughly mixed in.
Add the dry ingredients slowly until entirely mixed.
Pour the batter in to 2 greased loaf pans.
Bake about 45-50 minutes, or until a knife inserted in to the load comes out clean.
Do not overcook.

Zucchini Bread

Ingredients

3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs
1/2 cup vegetable oil
1/2 cup apple sauce
1 1/4 cups white sugar
1 cup brown sugar
3 teaspoons vanilla extract
2 cups grated zucchini
1 cup rasins



Directions

Soak raisins for 10 minutes to plump.
Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
Beat eggs, oil, apple sauce, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and rasins until well combined. Pour batter into prepared pans.
Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

Apple-Chicken Sausage

1 large tart apple, peeled and diced
2 teaspoons poultry seasoning
1 teaspoon salt
¼ teaspoon pepper
1 pound ground chicken

In a large bowl, combine the apple, poultry seasoning, salt and pepper. Crumble chicken over mixture and mix well, Shape into 8 3-inch patties.

In a large skillet coated with cooking spray, cook patties over medium heat for 5-6 minutes on each side or until no longer pink. Drain if necessary.
